Chocolate cake bites

Dear All, I’m really sorry for my absence the last two weeks, but I’ve had problems with my asthma. On top of that have I caught a cold and my daughter has been home from school as well. But I (we) are starting to feel alot better and hopefully I (we) will be back on track very soon.

I did however manage to make a little treat in the kitchen today. Yummy chocolate cake bites made out of rich chocolate mudcake, mixed with Italian Meringue Buttercream. I rolled them in pretty pastel colored sugar sprinkles (non-parelis) as I made them (this help to make the sprinkles stick to the cake bite). Super easy and super YUM!

  1. Sorry about your cold. I`m going through the same thing with my three year old. I did bake some sugar cookies and decorated them with the roses you gave a tutorial on. I`d be happy to send photos!!!!!

  5. Dang! I was looking at those very non-pariels in a shop this morning debating whether to buy. But I couldn’t justify the expense as I am trying to save up for a Planet Cake course.   10. Those are fun to make. My daughter and I call them “Pokies” after my granddaughter. I use my cake scrapes and come to think of it, I need to make some more. LOL

    I was just wondering about the cake stand…. where did you get it? Im on a bit of a search for LOVELY cake stands, they are a bit of a rarity where i come from… or maybe im just too fussy!

  32. Your site is very cute and somewhat informative, but, please, I implore you, learn how to spell and how to write well. You significantly lower the quality of your site with so many glaring mistakes. Examples of these are: “aswell” – this is actually two words, as well; using “there” for “they’re” – be careful of this, it’s very basic. Also, your run-on sentances are hard to follow. Sorry for being a stickler but you need your communication skills to match the look of your site. Thanks.

    I will inform YOU that you did infact spell sentences
    incorrectly.
    You may also be aware that the lady who publishes this site,takes time and effort for people who are eager to learn about all things cake, and she does it for FREE.
    Maybe you should take your own advice.

  34. Well said Abbi. As someone who has made some instructional videos and blogs and regularly replies to help queries, I can vouch for the fact that it does indeed take quite a bit of time.
    We do this because we love what we do and we try to help others who share our passion but maybe dont have the same experience.

  35. Dear Louise, I have been asked to make mini cupcakes for my nephews upcoming wedding shower. The papers tend to pull away from the cupcake, do you have any suggestions for this? Thank you, sandy

  36. Sandy: I know that there are a “chemical baking” explanation for that. I have not had the problem for long. My experience was because of the butter in the recipe. I never use recipes that call for equal parts of butter and sugar. I always use those with less butter. Also you can try and add 1-2 tbsp of flour to you mixture to see if that helps.

    I know that I once read on a blog about this issue but I cant remember where it was from.
