Lamingtons


I was in the mood for making a nice treat for the family today and here is the result: Lamingtons. Let me tell you this, do not get fooled by the simple look of Australias traditional cake. They can also be found in a pink version in New Zealand. They are SO good!. Perfect together with a nice cup of coffee, tea or a cold glass of milk Mmmmm.

I made my Lamingtons with a nice butter cake (baked and cooled the day before) and the traditional chocolate icing.

Toss them in desiccated coconut to cover.

Let the icing set. You can either serve Lamingtons plain or sandwich them with whipped cream and raspberry jam. Enjoy!

Cupcake recipes tryout

It seems like I am hanging on to the cupcakes at the moment. But I have a mission to find the best vanilla cupcake recipe. So therefor I tried two new recipes last night. One white 125 Best Cupcake Recipes by Julie Hasson and one yellow from Cupcakes by Joanna Farrow. I have tried the white one before but it failed. So this time I must have done my conversion from cup to grams perfect because it was some really great cupcakes that came out of the oven this time. The yellow one must be the most simple one to make a quick batch of tasty cupcakes. All the ingrediens goes in the bowl at the same time and you just beat the batter smooth and thats it really. You can add to the yellow dough: cocoa, lemon, coffee and chocolate chips. Both recipes made a nice dome, they did not shrink and today the paper cups is still sticking to the cakes.
So how did they taste? The white was light, moist and a bit loose in the crumb. The yellow one was firm, very moist and had a nice buttery flavor.
