Lemon meringue cupcakes

It is not that often that I find cupcake books here in copenhagen and especially not ones who have been translated into danish. So it was a surprise to find one yesterday when I was out shopping. The book I found was “Cupcakes” by Susannah Blake a sweet little book with simple delicious cupcake recipes in it.

I only had my eyes for the lemon meringue cupcakes and OMG how good they were. With a lemon curd filling and a sweet meringue swirl on top. This is one of the best lemon cupcakes I have ever tasted!

I did these together with one of my good friends and let me just say it was really hard NOT to eat more than one of these delicious treats. The small swirl of sweet meringue did not over power the moist lemon cupcake. So the flavour combination was just perfect…. well a bit more lemon zest would no spoil them but thats it!!

My trip to the cake show

Thursday the 8th of november went I on a five day trip to Birmingham UK to see the Cake Craft & Decorating Show with some of my danish cake friends. But there was also time for regular shopping!!
I always like to see if I can find cake things in the shops and I must say this year was my luck. Not only have I found myself a new collecting: mugs decorated with cakes and cupcakes.

I searched every department stores for mugs and I found whole four different mugs!! So now I have five “cake mugs” to my tea and coffe. But I also found lots of other cake things like a super cute pink cake stand and some sweet cake ornaments. I will post about those later.

Saturday and sunday was most of the time spend at the NEC. The cake show is amazing there is lots of stalls with all sorts of equipment, colours, cake tins, cake boards and loads more. There is workshops and demonstrations and then there is the competition classes with lots of beautiful crafted cakes and figurines.

I was so lucky to meet Lorraine Mckay aka aine2. she won gold for a great novelty cake and silver for single figurine entry of a sweet girl. I also meet Kathryn aka KiwiCakes on flickr at the show. Some of my cake friends from Finland and Sweden were there too. It was really nice to meet so many cake people. I can not show you photos from inside of the show due to restrictions sorry!

But on the photo you can see some of the nice stuff I was able to buy there: paste colours, lustre dusts, books, cutters, embossers, cookie cutters.

Do I need to tell that I came home with a very heavy suitcase??

Tea party & insect cookies

It was my intention to post these cookies last week but there was some problems with blogger and after a short “cake” holiday in the UK (more about that later) I think it is time to make that delayed post.

These cookies are made with my latest new cookie cutters and they are all covered with rolled fondant in sweet delicate pastel colours. I made the teapots and teacups in a madhatter tea party style with swirled handles, dots and mixing colours.

The butter -and dragonflies turned out really great with the two colour fondant. I have used my favourite modelling tool the dresden/veining tool on the wings and brushed some edible lustre dust on the wings to give them some sparkle.

I also made some simple hearts and some cute bon-bons. You can see those and some of my “old” cookies in my cake gallery.

Cupcake photos

Oh my god!! Two of my cupcake photos have been featured in a nationwide danish newspaper called Berlingske Tidende with reference to my blog. The article was about the cupcake. Cupcakes are not well known in Denmark, compared to fx. UK and US, but the newspaper descripes it as a new trend. I really hope that this article will help the cupcake to get common in cafés etc. Im really proud that my pictures were chosen :-)

A box of Halloween cookies

Halloween box
I made this little box of Halloween cookies to end this months Halloween fun. Christmas will be here before we know it ho ho ho!. It is sugar cookies with rolled fondant on. Pumpkins, witches hats and small bonbon’s wraped in cellophane. You can find more photos of the Halloween cookies in my cake gallery.

Your Halloween cake ideas

Ok, so I know its been a while since I have posted but I simply had to take a break from blogging. Also I want to say thank you to those of you who have already voted for me on Blogger’s Choice Awards it really means alot to me.

So this post is about some of your Halloween cake ideas that I wrote about in a earlier post. I have made these simple and easy spider cupcakes for our small Halloween party. I used royal icing and piped small black spiders on the cupcakes with a round decorating tip. The next photos is some I have recived from you!

This Halloween brownie graveyard is made by Gillian. Its decorated with cookie tombstones, ghosts and nice goodies.

The next cake is SO scary and really gross :-) This was actually made for a birthday boy who wanted a gross cake for his birthday. I think he got what he wanted ;-)

The cake is made by Kelly Lowe and it is a red velvet cake with cream cheese icing. Kelly made all the decorations by using fondant. She used pretzles for the logs under the cauldron. I think the worms and the fingers are SO realistic made. Uhhh!

This sweet little modelled baby in a pumpkin is made by my friend Karen. I think this would be a perfect cake topper on a baby shower cake.

The last cake is made by my danish cake friend Pia. Pia have made all these lovely decorations with fondant and tylo powder. The pumpkins, sunflowers and leaves would also be perfect decoration on cupcakes aswell.

Pirate birthday cake


I made this pirate cake for my nieces birthday party. The theme was pirates so I decided to make a cake with a pirate flag with skull and cross bones on it. The cake is covered with rolled fondant icing. I hope that all the pirates at the party loved the cake.

New cookie cutters & cupcakes

I have recently bought some new cookie cutters and I was so happy that I finally found the teapot cookie cutters, I think their shape reminds me of the madhatter’s tea party. I found them on ebay

The dragon fly is for my insect cutter collection and the car is so close to the car cookies I did earlier this year, only this one is smaller.

So now there is no excuse anymore! I have to make some cookies soon….

I also wanna show you some adorable pink cupcakes that I made the other day. They are covered in sweet pink poured fondant with small roses on top. I myself had two with a nice cup of tea.

Birthday cupcakes

These are some of the cupcakes I made for nieces bithday. I also made some mini cupcakes aswell with birthday candles. They are decorated with royal icing and lots of sprinkles, dragees and sanding sugar. I think they are so girly looking:)

The chocolate cupcakes on the photos is a new recipe I tried this time and they dont rise that much like the other chocolate recipe I use. But they tasted great anyway.

I also made some plain vanilla that you can see in my cake gallery.
