I’ve watched Cake Boss, and I don’t like it. I don’t like the yelling and arguing between family members. I don’t even like the cakes they make. It’s dysfunctional and not fun. I sure wouldn’t order a cake they’ve made, either…too much negativity involved. I like “Ace of Cakes” a lot better…at least they’re having fun and laughing!

I love that show. There is lots of daft, over the top stuff thats been orchestrated, but I love to see bits and pieces of technique, and some of the enormous cakes they do. Its clear buddy is an incredible artist even if he is a little larger than life!!

What can I say about cake boss, bad acting, he dishes out stupid pranks but he never gets caught if they play it on him, it is so fake, “Buddy” does it all, he taught them all etc. I cannot last to watch the whole episode unfortunately as there are some good tips you could pickup, more so than ace of cakes. I love to watch ace of cakes because they do have fun and they collaborate together and after a long days of work who wants’ to watch people screaming and yelling and he is always right.

I don’t dislike the shows (cake boss or ace of cakes), but some of the things they do seem unsanitary. Talking over the cakes, touching hair, etc.

I watched Cake Boss once for 20 min and that was all I could take. Ace of Cakes is so much more fun. It makes you wish you were there!

I don’t like the Cake Boss. I think it’s lots of acting….bad acting. Most of the things they do are very unrealistic. The episode where the guy dropped the wedding cake down the stairs while enroute to the reception was TOTALLY unreal. Honestly If it was that close to delivery time…who really has the time to recreate that kind of cake exactly the same way AND just happen to have extra cakes already baked in the exact same flavors and sizes required just standing by…. PLEASE!!! And the episode w/ the love pigeons sending the guys back and forth and they come back w/ ducks or whatever…. NOT. I don’t even enjoy watching Buddy on the Food Network Challenge shows. He’s truly arrogant and not that great. I don’t watch his show anymore.

Love Cake Boss – and do agree that little tips that are noted on the shows are so helpful. Quite a few “ah ha” moments”. Yelling? It’s ethnic – I live it.

Hi, Louise. Beautiful and informative site, it shows you put a lot of effort into it! Great news about Cake Boss. How can I make Fondant that cuts like a thick meringue? I see it at the start of the progam and I have not been able to make it like this, I know I am doing something wrong here. Mine always comes out somewhat harder to cut (like soft plastic) and I notice that people never eat it. Please help!
Thanks!

I love Cake Boss. It’s reality and they are very authentic. Buddy really cares about the cakes and gets upset when things aren’t done well. I do feel bad when he’s yelling at the family because they really are trying to do their best. but they always come together as a family at the end. Who’s perfect anyway?

I love Cake Boss, I still watch Ace of Cakes, but I got very dissapointed when to found out that they use a lot of foam on their cakes, I make my cakes completely out or real cake, that’s why I like the Cake Boss better .Don’t get me wrong I still like them.

Hi Louise,
I have a question not related to this topic, but I’m taking a chance. I’m trying to make dark brown marshmallow fondant. I have put a whole bottle of wilton brown food coloring gel and it’d not really dark…how can I achieve a dark brown mmf and is my fondant still going to be good with that much food coloring?
thanks

I love Cake Boss and Ace of Cakes both. Ace of Cakes is a super fun environment it seems, but I feel like Cake Boss has more talented employees… The jewelry box cake that one woman made? With that delicate little topper? Man, I’m in pastry school right now but it’ll be decades, probably, before I’m even close to being that talented!
(Also Stretch is cute) :3

Cake Boss is so typical (the family that is) of a northeastern (NewYOrk, NewJersey) area Italian family. They express themselves vividly and oftentimes quite dramatically. The show does have a flavor incredible sarcasm and ego (mostly by Buddy) but that’s what makes it hysterical. He has that Jersey accent and his cakes are real and they are not :”Models” like Ace of cakes. I know a few folks that had specialty cakes from Ace of Cakes shop and said theytasted old and pasty. Think Duff is more of a delegator and even when he has not even gone near a cake creation, he is the one showing up presenting it and taking all the credit. That’s not my idea of a true team player. I really get a kick out of the Cake Boss and would watch it over Ace of Cakes any day. There is absolutely nothing like a true, fresh and heartfelt made Italian creation. You go Cake Boss. Yes it can be loud but it’s so so hysterical. : )

A response for Jeni regarding dark brown mmf-
you have a couple of different options. first, try using a dark brown Crystal Color. It’s a bit expensive ($5/0.5 oz) but definitely worth it. the color is pure and does not fade or run like a lot of the Wilton colors. second, if you don’t mind having a chocolaty flavored fondant, use dark chocolate candy melts and, if needed, use cocoa powder to deepen the color further. recipe for chocolate mmf follows (from a forum on the wilton site):
1 cup mini marshmallows
1 tbsp water
1 oz melted chocolate
1 tbsp cocoa powder
1 1/2- 1 3/4 cup powder sugar

I love that show so much I cant stand it! I love all the drama. I think anyone working with so much family and running a large full scale bakery like that would be stressed so I think it’s realistic that there’s a lot of wanting to kill each other. I agree some of it si over the top (like Mary eating the lily???) but I still love it. And he does give great tips. I have had several of his cakes and they are really well made. And as for having cakes already made in the exact sizes, if you notice, they bake their cakes in sheets and then cut them up into whatever sizes they need.

I love cake boss it’s so much better than ace of cakes b/c i like how cake boss uses cake more instead of support items for a cake unlike ace of cakes who uses a lot of things that are not edible for a difficult cake!! I would love to get a cake from their shop!!
