Happy New Year

It is a scandinavian tradition to have “kransekage” and champagne at midnight New Years eve.

“Kransekage” is made of almond paste, icing sugar and eggwhites. I always make my own instead of buying one from my local baker, it also taste much better. This is the one I have made for our New Year celebration tonight.

I wish you all a happy New Year :-)

Book store update

I have updated the book stores and have now added five new “category pages” Gingerbread, Seasonal, Baking, Kids Cakes and Tea Time.

The sections “Gingerbread” and “Seasonal” contains books on how to bake, decorate and build gingerbread houses and making beautiful gingerbread cookies, Christmas cakes and sweet treats.

The “Baking” section has a varity of books with scrumptious cakes, muffins, cookies and treats to make. If you like to go in the kitchen with your kids then look at the books in the “Kids Cakes” sub-section. There you will find recipes on cakes to make with the kids and ideas on how to make the next birthday cake.

If you like romantic tea parties then the section “Tea Time” will be the place for you to visit. There you will find many beautiful books with recipes on how to make petit fours, cupcakes and lots of other delicious treats to serve at your tea party.

I hope that you will find the new sections interesting. Check out the book stores here: UK and US

Christmas basket cookies

I finished these beautiful Christmas basket cookies today. Now they only need to be packed into celophane bags. Then they are ready for this year small Christmas gifts to my friends. It is my favourite vanilla sugar cookies decorated with rolled fondant. At first I was planing to make them all white but then I thought a brown basket was nicer.

I have used a basket embosser from Patchwork Cutters to make the basket look and painted them with brown petal dust dissolved in clear alcohol. The flowers are made with the Petunia cutter from Tinkertech Two with the flower veiner. Some Holly leaves and loads of gold sparkle dust. I am really satisfied with the result. Now I just hope my friends thinks the same.

Cupcake treats

My favorite cupcake combo at the moment is chocolate cupcakes with loads of marshmallow frosting on top. So here are some of my latest cupcake treats. To the left, cupcakes decorated with candy canes and home colored sprinkles and on the right some “Hi-Hats” or should we call them “Low-Hats” ;-) Well for a first time, they are more than ok and the nice red sparkle gives them a Christmas touch. Loads of chocolate and loads of marshmallow frosting can it get any better?

Lemon meringue cupcakes

It is not that often that I find cupcake books here in copenhagen and especially not ones who have been translated into danish. So it was a surprise to find one yesterday when I was out shopping. The book I found was “Cupcakes” by Susannah Blake a sweet little book with simple delicious cupcake recipes in it.

I only had my eyes for the lemon meringue cupcakes and OMG how good they were. With a lemon curd filling and a sweet meringue swirl on top. This is one of the best lemon cupcakes I have ever tasted!

I did these together with one of my good friends and let me just say it was really hard NOT to eat more than one of these delicious treats. The small swirl of sweet meringue did not over power the moist lemon cupcake. So the flavour combination was just perfect…. well a bit more lemon zest would not spoil them but thats it!!
